Leading a small team means really getting stuck in at every service which Cathryn does with real gusto showing a talent for storytelling around her personally selected wine list. The list, by her own admission is never complete, constantly evolving around the pillars of sustainable winemaking, natural methods, finding the best of each region and of course championing Welsh wine. Her passion is clear with an encyclopaedic knowledge which means bold choices and unexpected twists.
