It is worth arriving early for a meal at Steve Smith at Latymer to hone the appetite with a stroll around the gardens, wild woodland, or even get in some action on the golf course, or inaction in the spa of the 123-acre Pennyhill Park estate. Suitably creeper-clad, the Victorian manor is a luxurious country-house hotel with panelled walls and rich floral fabrics. It all adds up to a formal and stylish setting for food full of technical precision and innovation, showcased on seasonal six- and four-course menus. Setting the mood with Smith’s characteristic detail and precision, the snacks are superb, among them sirloin tartare with capers, Tabasco and crispy seaweed, and fresh Brixham crab with brown crab emulsion and cucumber foam.
