Overview
At Wilder the show opens for everyone at 7pm, and it’s a no-choice, eight-course ‘surprise’ tasting menu that unfolds in a calming, neutral space run with great verve and knowledge by an engaging team. The kitchen’s passion for off-the-wall flavour combinations, British ingredients, foraging, fermenting and preserving underpins the whole experience: roast organic chicken breast comes with miso and sweetcorn purée, truffle and a side dish of thigh meat and mushrooms in cabbage with lemon cream, followed by an intriguing sweet and savoury dessert of tomato pannacotta with Pernod, black olives, white chocolate ganache, basil ice cream and tomato sherbet. Well-chosen wines and creative soft drink flights are available to add further interest.
