Overview
Down a cobbled street in Manchester’s vibrant Ancoats area, Mana has a minimalist look with high ceilings, picture windows and unclothed darkwood tables. An open island-style kitchen is populated by hard-at-work chefs sending out some highly accomplished Scandi-influenced cooking. Multi-course menus deliver dishes that are highly technical, intelligent and masterfully constructed to balance flavours and textures, with fermentation and fire contributing to the skillset. There’s no formal starter/main/dessert format so expect to find the finest raw materials underpinning the 16 or 17 courses of varying sizes that change according to the seasons.
It’s a blind tasting menu, but you might get to experience Carlingford Loch oysters, horseradish and dill; Moray Firth barbequed langoustine, cured egg yolks and grand fir; ‘the rest of the langoustine’, claw cappelletto in a broth made from its head; ‘a piece of particularly large turbot’ from Brixham with nasturtiums; and Peking duck slowly rendered over burning grape vines. Rounding off with frozen buckwheat fudge.
