Located in the cookery school on the Swinton Estate, just a short walk from the hotel itself, Chef’s Table by Josh Barnes is an intimate fine dining operation with just 12 covers. After aperitifs in the cosy booth area, diners sit together at a table facing the kitchen – it’s a homely ambience with dried garlic and chillies hanging above, and vintage cooking-themed prints. The chefs create intricate dishes built on the superb seasonal bounty, along with preserved, foraged and fermented ingredients from the estate and kitchen garden in eight-course dinner menus of intricate, highly detailed dishes; you might also opt for the fascinating and quirky discoveries that lie among the wine flights.
