Fifty Two
"Skilful modern dining in grand country house."
Overview
In an annexe of 19th-century Rudding Park hotel, Fifty Two’s intriguing name is inspired by the number of raised beds to be found in the restaurant’s abundant kitchen garden. The hotel is a luxury affair with the full complement of a golf course and spa pampering, but if you’re expecting the usual country house dining package, you may be surprised. A minute’s walk from the hotel (or you can ask the team to drive you there), part of the restaurant is housed in a spacious shipping container. This is very much an immersive gastronomic experience with plenty of theatre, a concept described as being ‘Like a dinner party with friends, there’s no menu and you place your faith in the cooking skills of your host’.
The kitchen team is headed by Adam Degg, and the chefs proudly bring dishes out to diners. There’s just the one sitting each evening and every course fizzes with creativity. Dishes are skilfully executed with a strong sense of freshness, flavour and balance – it’s confident cooking. Things start on the heated terrace (or inside the new glass box in winter) with an amuse bouche before diners head indoors to the contemporary restaurant with all tables and chairs facing the open kitchen and pass. Every dish is a surprise, described as it’s brought to table, and diners are encouraged to talk about it all with the chefs and one another. Along the way, there’s a mushroom tartlet, lion's mane, shiitake, wild garlic, ricotta, asparagus and truffle, a dish packed full of variety from the garden. It might be followed by salt-aged Waterford Farm beef – fillet, bone marrow, ox cheek – with mustard and celeriac. Desserts include a wobbly and rich brown butter custard tart boasting crisp, wafer-thin pastry and served with Yorkshire rhubarb and sorrel.
