Overview
The White Swan at Fence is a rare find: a proper village pub with a bar where locals sup pints, coupled with an unarguably sound ethos of sending customers home happy. Inside, the look is traditional and unassuming, but superb food is what sets it head and shoulders above your average pub offering. Tom Parker heads up the kitchen with real passion, his impressive technical skills sending out dishes bursting with fresh and vivid flavours – a top-class Orkney scallop, perfectly caramelised and matched with roasted shallot purée, thyme foam and a roasted onion consommé, followed by a virtuoso dish of red-leg partridge with celeriac purée, chicken mousse, poached damson and Madeira jus.
