Overview
The farm-to-plate concept is truly at the heart of the excellent food at John’s House since the red-brick building is located on the edge of the farm where chef John Duffin grew up and much of the produce that appears on your plate comes from his family’s land. Duffin worked in some of London’s stellar kitchens before returning to his Leicestershire roots and opening his own restaurant in a charming cottage, where bare beams, brick walls and wooden floors all add up to a rustic feel. If you’re expecting food in a similar vein, think again, earthy, full-bore flavours and entertaining textures are all present and correct in precise ingredient-led dishes full of contemporary verve: opening the show, a crispy potato cake is infused with a delicious mix of truffle, wild garlic and Beauvale cheese, then chilled cream of Porthilly oyster is matched with shaved horseradish and dill. Fish sourced from the best possible suppliers is handled with aplomb, as seen in a dish of Gigha halibut with asparagus, morels and salted lemon sauce, while locally farmed pork is paired with potatoes, onion, red pepper and wild garlic purée.
