Overview
In a converted townhouse, Muse is tucked away in a quiet Belgravia mews close to Sloane Square. Comprising a series of compact spaces set across two levels connected by a narrow staircase, it’s an intimate setting – there are just 23 seats – and the open kitchen provides a unique opportunity for diners to fully immerse themselves in the gastronomic experience. The understated decor brings together brass edged marble tables and comfortable, stylishly upholstered banquettes. The dining concept here is all about memory and inspiration, the menus telling evocative stories – mostly tales from Tom Aikens’ childhood.
The menu progression is structured around narrative themes and personal inspirations, with seasonal ingredients influencing the evolution of dishes throughout the year. On the first floor you can sit by the marble chef’s counter and watch the team calmly constructing the dishes. Service is chatty and the atmosphere is very relaxed and informal, with Aikens and the team bringing dishes to the table and engaging with guests for an experience that’s the very opposite of stuffiness despite its swanky address. Choosing from the six- or ten-course seasonal tasting menus, expect precise, elegant cooking where flavours are bang-on and modern techniques are applied to deliver clarity and refined presentation. Everything looks completely stunning, and dishes are intriguingly named for the story they evoke. ‘Down to Earth’ turns out to be a celeriac ‘steak’ with chestnut mushrooms and a generous flourish of winter truffles on top. It might be followed by ‘The Love Affair’- leg and breast of pigeon, with chicken and wild garlic farce, red wine sauce, wild garlic leaves and tine grilled leeks. Round things off with dessert of ‘Far too tempting’ – a modern interpretation of rhubarb and custard – with ginger and jasmine crème pâtissière, refreshing rhubarb kombucha granita and crème fraîche ‘snow’.
