Overview
The setting at Sorrel may be a 300-year-old Grade II listed building with the dining room divided by a framework of exposed gnarly old timbers, but the glass-walled high-tech kitchen shows that its culinary heart lies firmly in the 21st century. Alex Payne has taken the helm bringing his own signature to first-rate seasonal produce delivered with excellent technical skills and first-class presentation. Among a salvo of snacks, a little tart of poached lobster, lobster emulsion and pickled pear gel in a thin crisp pastry case shows the precise style. Hand-dived Orkney scallop is sliced and topped with N25 caviar atop a sublime sauce with diced potato, mussel, fresh herbs and delicious morels. Show more
