With some of England’s most important historic gardens surrounding the sumptuous Tudor country house hotel, the kitchen team at Gravetye Manor Hotel can call on seasonal produce from the huge walled kitchen garden as the foundations of their dynamic modern British cooking. Dishes are pretty as a picture and deliver exceptional accuracy and depth of flavour without being fussy or over complex. Cured Orkney scallops come céviche-style with pure, clean flavours of radishes, citrus and shiso, while Cornish monkfish is cooked over coals and matched with summer beans, English chorizo and basil purée and pesto. To finish, there’s blackcurrant soufflé with leaf ice cream and blackcurrant caramel.
