Byatt’s inventive, light, modern European cooking has its feet firmly grounded in French classicism, driven by deceptive simplicity, balance and layers of flavour. From an evening menu start with seared Yellowfin tuna, English peas and burrata, then move on to warm semi-smoked salmon, beurre blanc, dulse and cucumber before Herdwick lamb T-bone, courgette, green olive and Amalfi lemon.
