Overview
In an isolated and elemental location on the shores of Loch Fyne, Inver is the perfect setting for chef Pam Brunton’s cooking: both the Scandi-influenced surroundings and the deceptively simple approach to the food reflect her time spent at Noma in Denmark. Whitewashed walls, open fires, sheepskins, driftwood decor and, of course, the views across the loch – everything just seems to fit. Ultra-seasonal menus are driven by the finest local ingredients to deliver bold, fine-tuned flavours – a perfectly caramelised scallop with tomato, chamomile, kelp, purslane and samphire is an umami-laden treat, followed by various cuts of Dexter beef in a multi-faceted dish with horseradish, smoked marrow, onion and rosehip romesco.
