Overview
Built in 1890 by stationery supremo WH Smith, Bovey Castle was reinvented as a ‘golfing hotel’ by the Great Western Railway back in 1930, an association acknowledged in its top dining venue, the Great Western restaurant. Local lad Mark Budd leads the kitchen team, and his fondness for regional and seasonal ingredients from land and sea looms large in good-looking contemporary dishes that reveal well-honed technical skills and sound classical roots – from starters like gin-cured sea trout with clementine and fennel salad to mains such as pepper loin and faggot of Bovey Estate venison with braised red cabbage, chestnuts and parsnips. Forced rhubarb soufflé with Madagascan vanilla ice cream is one way to round the meal off nicely.
